I just made these lettuce wraps for dinner and loved them so much I had to share...RIGHT NOW. The wraps are pretty basic, I think its all in the dipping sauce. Now the dipping sauce is something that I currently eat several times a week, usually used as a salad dressing, I'm obsessed. This meal is low carb, gluten free and dairy free....not to mention full of fresh veggies! Here it is.....
| Dipping Sauce:
2 tbsp. olive oil 2 tbsp. seasoned rice wine vinegar 1 tbsp. soy sauce 2 tbsp. agave 1 tbsp. honey 1 tbsp. green onion 1 tbsp. almonds 1 tsp. sesame seeds pinch of salt | Wraps:
2 small carrots 1 cup chopped mushrooms 1/2 cucumber 1/2 red bell pepper 2 cloves chopped garlic 1 tsp sesame seeds 1 head butter lettuce 1/4 cup of the dipping sauce 2 tbsp. green onion |
Mix all the dipping sauce ingredients together and reserve 1/4 of a cup. Cut carrots, cucumber and bell pepper into thin strips. In a medium saucepan add the carrots, mushrooms, garlic and reserved sauce, cook until tender. Add the sesame seeds and green onion in the last few minutes of cooking. Remove and wash the leaves of your lettuce. Serve the cooked veggies, raw veggies and dipping sauces .{I added store bought peanut sauce for dipping as well}. Now try to stop eating them :)
For Easter brunch I made my usual go-to baked pecan french toast recipe. It is so simple and you can make it the night before and bake it in the morning which makes it perfect for holidays!
French Toast
1 french bread baguette
6 eggs
1 cup milk
1 cup heavy cream
1/2 tsp cinnamon
1 tbs vanilla
dash of nutmeg
Pecan Topping
1 cup brown sugar
1 stick butter {melted}
1/2 cup chopped pecans
1/4 tsp cinnamon
1 tsp vanilla
dash of salt
dash of nutmeg
Directions
Slice baguette into 1/2 inch pieces and arrange in a 9x13 baking dish, overlapping a little. Mix the eggs, cream, milk, spices and vanilla together in a bowl and pour over the bread. Then mix all the topping ingredients together and spoon over the bread mixture. Cover and refrigerate overnight. In the morning bake at 375 for 45-60 minutes until it is puffed up and golden brown on the top. Serve with your choice of maple syrup or fresh fruit!
After breakfast we sat outside and put on a little Easter egg hunt for this sweet girl. We had such a fun time watching her hunt eggs and find all her treats! She loved it!
I felt so lucky to play a small part in this adorable owl themed baby girl shower. It was for one of my lovely friends and her family did such a wonderful job putting on the shower. Sweet Events made the desserts and had so much fun setting up the girly pink, yellow, and grey table display. Best wishes to the mom and dad to be and I can't wait to meet their sweet girl!

A couple weeks back I put on a rustic country birthday party for my husband. He was born ans raised a cowboy which was the inspiration for the theme. It was a beautiful day, great for roping and grilling. We went very casual with the decorations and food; we had a "build a burger" bar complete with all the toppings. We finished off the night with the s'more bar and a campfire!
This weekend I had a little fun with glue, glitter and vases. I love the Martha Stewart Crafts glitter and glittering glue so much that I'm going to GIVE SOME AWAY! Just post a comment below along with your email to enter the drawing!
Here are a few of the vases I made using the "tinsel" gold glitter by Martha Stewart Crafts bought at Michaels. I can't wait to add these to my craft room re-do! They are so easy to make but I added a quick tutorial with a few tips below!
| First you will need: -Glass Vase -Tape {patterned tape is easier to see} -Glittering Glue -Glitter or tinsel glitter
| Step Two Tape off the section you would like to glitter, feel free to mix it up and add stripes or glitter the whole thing.
| Steps Three & Four Evenly brush on the glue then sprinkle on the glitter. Knock of any excess glitter and let dry. Remove the tape and your done! {I found that doing this over a paper plate was the best way to get the excess glitter back in the jar}

I also glittered a couple glass cylinders to cover tall candles and added them to my entryway.
